Mondays are traditional red beans day in New Orleans. So fire you up a pot and get that chow on the table.

Yes, my friends. today is National Tater Tot Day. Which naturally made me think of Minnesota’s signature hotdish, the tater tot casserole. I’ve found what I think is a most masterful take on the classic skillet recipe and technique, from Brenda the Farm Girl. She even gives you both homemade gravy AND canned soup versions.
